Chocolate Chipotle Cookies

 Chocolate Chipotle Cookies

Recipe by Arty McGoo. This version is slightly adjusted for Artesão Cookie Molds

Recipe can be halved

Weigh ingredients for best results


5 cups all-purpose flour (694 grams)

1 cup cocoa powder (102 grams)

2 teaspoons instant espresso powder (optional)

1 teaspoon salt

2 teaspoons cinnamon

1 teaspoon ground chipotle chili powder

2 cups butter, softened

2 cups sugar (200 grams)

2 large eggs

2 teaspoons vanilla



  • Combine flour, salt, spices
  • In a large mixing bowl, cream butter and sugar until light and fluffy
  • Beat in egg and vanilla until well combined
  • Gradually add the flour mixture at low speed. Scrape down sides as needed until well combined
  • Wrap in plastic wrap or airtight container and chill for about 2 hours before molding
  • Bake at 350° F for 6-12 minutes depending on thickness of cookie

This recipe is not overly spicy and gives just a hint of warmth at the end of eating. You can go heavier on the spices if you like hot spicy cookies.
